Shredded cheese, milk, green salsa, sour cream, and shrimp with internal temperatures between 52 degrees F and 57 degrees F cold holding in a glass door reach-in cooler by the prep table. Ambient temperature of the unit was found to be 53.2 degrees F using a min/max thermometer. Spoke with PIC and products were placed into the unit at open (approximately 1.5 hours before inspectors arrival.) All TCS items were moved out of the unit and placed into other reach-in coolers. PIC stated that they will call a technician to repair the unit. Ensure TCS cold holding items are held at a temperature of 41 degrees F or below.

This establishment received a B Grade and had 1 Priority, 0 Priority Foundation and 1 Core violations on this inspection. No County legal action will result from this inspection. A pattern of non-compliance for foodborne illness risk factor violation # [20], [3-501.16(A)(2) and (B)] has been noted during this inspection. An Active Managerial Control Intervention Plan visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. An AMC training was tentatively scheduled for 4/26/2023, operator will reach out if date needs to change due to staff scheduling. Inspection rights reviewed with Yantra V. Inspection report emailed. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months.
