PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ----- 2 pans of Raw chicken, 1 pan of raw fish/salmon, and 1 pan of raw steaks observed with an internal temperature range of 47-51*F and all were being cold held inside the refrigerated drawers under the flat top. The ambient of the unit was 44*F. Per PIC, all meats had been in the reach-in cooler for roughly 1 and half hours. PIC relocated all meats to the walk-in cooler to rapidly cool. All items were later observed with internal temperatures below 41*F after 30min inside the walk-in cooler. Advised PIC to not use the refrigerated drawers until they can hold and ambient temperature of <41*F. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC.
