PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. - Raw salmon, seabass, crab cakes, and raw steaks found inside cold holding drawers at cookline under cookline and next to hot holding table at 47 to 54 deg F. Per person in charge items had been placed in cooler less than 4 hours prior for dinner service. All items were moved to walk-in cooler to rapid cool down to 41 deg F. All TCS food must be cold held at 41 deg F or below. Establishment is currently on a stipulated agreement with MCESD at the time of inspection establishment found to be in compliance with agreement. Discussed chemical storage, datemarking, and food protection for continued training.
