PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. >>> In small, refrigerated drawers at end of cookline, near salad station, observed raw beef filets, raw chicken, raw pork with internal temperatures 45*-49*F when measured with inspector and establishment probe thermometers. Except during preparation, cooking, cooling, or when time is used as a control all TCS (time/temperature controlled for safety) food to be maintained at 41°F or less. Per Person in Charge (PIC), raw beef, raw chicken and raw pork were held in drawers less than 1.5 hours. PIC moved raw meats to walk-in to rapidly cool to 41*F or below. Per PIC, refrigerated drawers were serviced a few hours prior to inspection. Ambient temperature of drawers 42.4*F. PIC stated TCS foods will be iced for holding on the cookline during service.
