Observed double door reach in cooler with ambient temperature measured to be 32*F holding pan of cooked beef 50*F, several large plastic containers of beef broth 45-50*F and two large plastic containers of cooked beans 45*F. Per person in charge items were cooked yesterday, more than 12 hours prior. Person in charge is unsure of how items were cooled but states that items have not been removed from cooler today. Person in charge removed items and voluntarily discarded, see embargo. Reviewed cooling time/temperature parameters and methods (including use of shallow pans, ice wands, ice bath). Provided cooling logs and cooling guidance documents in English and Spanish. Inspector's Thermapen and min/max thermometer and establishment's thermometers were calibrated in ice water at 32*F.
