Calibrated inspector's Thermapen and min/max thermometers in ice water at 32*F. Observed walk in ambient temperature 44-47*F holding Time/temperature Control for Safety (TCS) foods (cream cheese, shrimp, fish, crab mixtures, salad, milk) with internal temperatures measured to be 47-48*F. Per person in charge unit was checked 1.5 hours prior and foods were holding at 40*F at that time. Person in charge called for repair, and propped open freezer door which dropped ambient temperature of cooler to 36*F at time of inspection to facilitate rapid cooling of TCS foods.

Walk in is required for safe capacity to operate and requires a 24 hour re-inspection.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
