Refrigerated drawers located under stove top (closest to dish area) measured with an ambient temperature of 46-52 degrees F. TCS food items in the refrigerated drawers measured with internal temperatures ranging from 47-52 degrees F. Food items such as various cooked and raw meats were suggested for discard- see embargo list for details. Food items were stored in refrigerated drawers over night. Refrigerated drawers will not be used to store TCS foods until it can maintain internal food temperatures of 41 degrees F or below. Discussed cold holding, conducting routine temperature checks, and maintaining equipment. Adequate alternative refrigeration available to operate safely 2nd consecutive violation
