Observed raw chicken katsu at three door prep table across from grill at 45*F. Cold hold of food to be at 41*F or lower. As per staff chicken katsu was brought to prep table approximately 1 hour prior to the inspection starting. Chicken was returned to walk in cooler and cooled to 41*F.

Core-3-501.13, C: Thawing Observed chicken being thawed at food preparation sink without being submerged at temperatures between 37-50*F. Thawing practice is allowing an uneven thaw. Foods are to be thawed under cold running water, in the refrigerator or in the microwave and immediately cooked. Chicken was adjusted to be submerged and thawed completely.

No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Cristina M. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. 2-102.12.(A) Certified Food Protection Manager. During site visit no staff on site with a Certified Food Protection Manager certificate. As of February 2022, all establishments must have a Certified Food Protection Manager on site during normal hours of operation. Core Violation, Correct Prior to Next Routine Inspection.
