PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ----- The following food items were being cold held inside the reach-in cooler that had an ambient temperature of 49*F at time of inspection; shredded cheddar (48*F), Sliced cheddar (48*F), pulled pork (47*F), raw diced chicken (51*F), raw hamburger (50*F), Diced and sliced ham (48*F). A min/max thermometer was placed in this reach-in cooler for 20 minutes and confirmed an ambient temperature of 50*F. Per PIC, the unit was stocked more than 4hrs prior to this inspection. PIC stated that the reach-in cooler was working in the morning but uncertain as to when it broke. ALL food items mentioned above were discarded at time of inspection. Cold holding temperatures for TCS foods must be at 41*F or below, eggs must be stored at 45*F or below. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Establishment has many other working refrigerators to use.

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability ----- In multiple areas throughout the kitchen, observed partial or entire missing floor tiles, exposing the concrete underneath and collecting water. PIC stated they would put in a work order. Please ensure that all floors walls and ceilings are kept in good condition that allow them to be smooth and easily cleanable.
