The hand washing sink near the dishwasher had hash browns inside and was not draining properly, the handwashing sink at cook line had a pitcher inside and food debris, the hand washing sink by servers station had lemon wedges and coffee grounds. Hand washing sinks are for hand washing only, and must be maintained so accessible at all time. All were corrected at time of inspection.

An employee was assigned to clean the mixer at time of inspection. Discussed procedure for cleaning equipment that has to be cleaned in place. Please ensure food contact equipment is properly cleaned and sanitized. Food contact equipment shall be clean to both sight and touch.

Food contact surfaces of cooking or reheating equipment shall be kept free of encrusted food deposits and other soil accumulations. Food contact surfaces shall be clean to sight and touch. PIC assigned an employee to clean the microwave at time of inspection. Advised PIC to clean equipment after spills.

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability ----- In multiple areas throughout the kitchen, observed partial or entire missing floor tiles, exposing the concrete underneath and collecting water. PIC stated they would put in a work order. Please ensure that all floors walls and ceilings are kept in good condition that allow them to be smooth and easily cleanable. Core-6-501.12, C: Cleaning, Frequency and Restrictions ----- Areas below equipment and storage racks observed with build up of food debris. Reach-in cooler at the cook line observed with encrusted food deposits and standing water on the bottom. Please clean inside and below equipment and storage racks at a frequency and manner that prevents build up and prevents attraction of pests.
