Priority Foundation-5-202.12 (A), Pf: Handwashing Sinks, Installation; Proper Temperature, Mixing Faucet. >>> At kitchen handwashing sink, observed not hot water available from faucet due to hot water valve being shut off from underneath sink. Maximum temperature of water reached 93*F. Water of at least 100°F shall be available at all handwashing sinks through a mixing valve or combination faucet. When hot water valve is turned on hot water runs continuously from faucet even if handle is closed. Instructed Person in Charge to turn hot water valve on when in use or utilize the hand wash sink behind the bar for proper handwashing until kitchen sink is prepared. Repair kitchen handwashing sink prior to Re-Inspection within 24 hours. Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. In single glass door refrigerator, in back food storage area, observed 21 bags of shredded mozzarella cheese with internal temperatures on 51*-52*F. Except during preparation, cooking, cooling, or when time is used as a control all TCS (time/temperature controlled for safety) food to be maintained at 41°F or less. Per Person in Charge (PIC) shredded cheese bags were delivered and placed in refrigerator less than 4 hours prior. Cheese was moved to alternate refrigeration to rapidly cool to 41*F or below. Ambient temperature of unit 54.1*F when measured with inspector min/max irreversible thermometer. After removing half of the products stored in unit and rearranging for air flow, ambient temperature of refrigerator 40.0*F. Discussed importance of proper cold holding and monitoring of temperatures with PIC. Outer openings of a food establishment shall be protected against the entry of insects and rodents by filling or closing holes and other gaps along floors, walls, and ceilings; closed, tight-fitting windows; and solid, self-closing, tight-fitting doors. Entrance doors were closed at time of inspection.
