Observed raw shrimp stored in sandwich prep refrigerator with a temperature of 46*F. As per the person in charge, shrimp was placed in unit frozen approximately 3 hours prior to inspection. Grill cook placed cooked al pastor next to shrimp in sandwich prep cooler after cooking approximately one hour prior to inspection. Cold hold of food to be 41*F or lower. Shrimp was placed in freezer to quickly chill to 41*F during inspection. Al pastor was placed in walk in cooler to cool to 41*F. Advised person n charge not to place warm foods in top portion of sandwich prep cooler.
