Observed cook handling cooked pasta with bare hands in back kitchen prep area. Advised person in charge (PIC) and cook that ready to eat (RTE) foods must not be handled with bare hands. Suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment shall be used when handling RTE foods. Cook discarded the top layer of cooked pasta that was touched, washed hands, and put on food safe gloves.

Observed containers of cooked pulled pork and mashed potatoes in walk-in refrigerator without date marking labels. Cook stated they foods were more than 24 hours old, and prepared approximately 1 May. Advised person in charge (PIC) that ready to eat (RTE), time/temperature control for safety (TCS) foods held longer than 24 hours must be properly labeled with a date to ensure food items are not held longer than 7 days. Cook placed date marking labels on containers and PIC stated they will ensure RTE/TCS foods are properly labeled.

Discussed date marking procedures for food items in 1st floor north and south wing refrigerators. Ensure dates on food items are marked for no more than 7 days (1st day when prepped + 6 days holding). Inspection rights verbally reviewed with person in charge, Chad C.
