Internal temperatures measured from 83°F-105°F. Per person in charge (PIC), the chicken was cooked about 30 minutes prior. PIC had the pans placed in the walk-in refrigerator to facilitate rapid cooling. Reviewed cooling methods with PIC. *Consecutive Violation*

Core-4-101.11 (B-E), C: Characteristics-Multiuse; Durable, Nonabsorbent, Smooth, Easily Cleanable --Observed a large plastic bowl with multiple cracks being used to cover the sushi rice. Person in charge discarded the bowl and used a new one at time of inspection. Discussed maintaining food contact surfaces so that they are smooth, easily cleanable, and in good condition. Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment --One of the lids of the rice cookers is in disrepair, making it difficult to clean. Person in charge will notify the owner to repair or replace the unit. Correct prior to next routine inspection.

Inspection report emailed. Core-2-102.12(A), C: Certified Food Protection Manager --No CFPM was present while on site. Person in charge will notify the owner to get someone else certified when they're not present. Person in Charge shall be the Certified Food Protection Manager. Per paragraph 2-101.11, a Person in Charge must be present during all hours of operation
