Refrigerated unit in kitchen ambient temperature measured to be 51*F holding Time/Temperature Control for Safety (TCS) foods (boiled eggs, milk, cream cheese) with internal temperatures measured to be 51-52*F. Per person in charge unit was holding 41*F at 8:30 this morning. TCS items were moved to alternate coolers that are holding proper temperature at time of inspection. Do not use this unit to hold TCS foods until it can hold 41*F or below. Person in charge will use this unit for breads and other non TCS and ensure TCS foods are held in coolers holding 41*F or below in adequate alternate coolers.

Core-2-102.12(A), C: Certified Food Protection Manager. Person in charge does not have food protection manager certification. Provided copy of MCEHC changes. Certified food protection manager is required to be on-site during hours of operation. Emailed inspection report. A pattern of non-compliance is developing for Priority violation # 20, 3-501.16, which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Operator will contact district inspector to schedule AMC visit.
