PRIORITY VIOLATION-3-403.11, P: Reheating for Hot Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4618/AMC-Toolbox---Reheating. --Cooked gumbo and sausages in the steam boxes measured internal temperatures between 115°F-118°F. Per person in charge, these items were reheated before they opened and placed in the unit about an hour prior to inspection. These items were removed from the unit and reheated to 165°F at time of inspection. Reviewed reheating procedure with person in charge to verify reheated products reach 165°F before hot holding.

Core-6-501.12, C: Cleaning, Frequency and Restrictions --Observed accumulation of dust on the ceiling and walls outside of the hood throughout the kitchen. Person in charge will have the area cleaned by the end of the day. Discussed increasing cleaning frequency to prevent additional buildup.

Inspection completed with badge: #272 Core-2-102.12(A), C: Certified Food Protection Manager - At time of inspection, person in charge (PIC) did not have a certified food manager certification. PIC will notify the manager to obtain the certificate. PIC shall maintain a certified food manager certification during all hours of operation. Correct prior to next routine inspection.
