Inspection Comments

New owner re-inspection. Establishment would like to serve tacos, burritos and el pastor. Owner would like to start small with tacos only. Service will be from the kitchen to table service outside through the back door. There is currently no outdoor seating. Most items were corrected. Please follow up on the items below: 1). Install a splash shield on the left side of the hand wash sink. 2). Close the gap in the floor along the threshold to the retail area. 3). The three compartment sink drips slowly, please re-pair. 4). Please install a self closer on the door to the retail area. Note that one you operate the kitchen door are to remain closed. Establishment is not open and owner is planning on opening at the end of September after the split system is installed for the kitchen. The swamp cooler will most likely be disconnected. If you add any equipment please make sure you use only commercial equipment. This establishment has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the issuance of this permit and begin operation, the applicant must first submit payment of the permit fee to the Department’s Business Services Office. Per Chapter I, Regulation 4, of the Maricopa County Environmental Health Code, no person shall conduct an operation or an establishment for which a permit is required without holding the necessary and valid permit to do so. We accept cash, check, money order, credit/debit. It is the responsibility of the permit holder/owner to notify MCESD if there are contact/ billing address changes. Owner would like to set up a hot well outside and assembly tacos along the street. This will need to be discussed internally. For now this is not approved. Store is starting out with a small menu without seating. You are not allowed to cook, cool and re-heat more than two items. If that changes then you will need to upgrade your permit. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
