PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed containers of beef birria, birria consomme, cooked Spanish rice, cooked beans, cooked beef head and tongue, and salsa containing tomatoes with internal temperature ranging between 50-55 degrees Fahrenheit. Please ensure time-and-temperature control for safety (TCS) foods are kept cold at 41F or lower. All items were stored in reach-in refrigerator that was measured with ambient air temperature of 54F with min-max thermometer. All items, per operator, had been in this refrigerator for more than 4 hours prior to the inspection. Operator voluntarily discarded items at time of inspection. Unit may not be used to hold TCS foods until repairs are completed and unit can hold cold at 41F or colder. Establishment has sufficient refrigeration to hold remaining TCS foods cold.

This establishment received a B Grade and had 1 Priority and 0 Priority Foundation violations on this inspection. Inspection rights accepted by Jose F. Report e-mailed. Observed advanced preparation for 3+ menu items, including cooked rice, cooked beans, and beef birria using Class 3 food permit. Establishment will be upgraded to Class 4 food permit to better reflect the menu processes. Permit fee will be adjusted at next permit renewal to reflect the change in the permit class. No County legal action will result from this inspection. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal.
