Observed two paper towel dispensers with dead batteries and unable to dispense paper towels. Only one had paper towels for staff to use. All hand sinks must have soap and paper towels for handwashing, Paper towels were added to hand sinks and work order added to get batteries for dispensers.,

Observed meatloaf at cooling drawers by grill at 55*F. Cold hold of food t be 41*F or lower during storage and preparation. Meat loaf was embargoed and discarded by back supervisor.

Observed cooling drawers at grill line with an ambient temperature of 48*F. According to grill staff unit was closed for most of the morning. As per back supervisor grill line cooling drawers will not be used until fixed. Reinspection will be completed on or before Tuesday, July 22, 2021

Core-4-602.13, C: Nonfood Contact Surfaces Observed shelves in walk in cooler with some old food debris on wire racks. Also observed food and grease behind grill line on floor by wall, both areas are to be cleaned at regular intervals to prevent build up of dirt and food debris.

Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained Drain at mop sink is draining slow, at beginning of inspection there was approximately 2 inches of water in basin. By end of inspection mop sink had drained completely. According to the person in charge a swamp cooler went out and access water is being drained into mop sink. When there is standing water in mop sink it interferes with the ability for unclean mop water to be dumped into sink. Drain will be snaked to unclog to allow more water run through sink until swamp cooler is fixed.

This establishment received a(n) B Grade and had 1 Priority, 2 Priority Foundation and 2 Core violations on this inspection. No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Cesar Lopez Printed copy of inspection report to facility. Printed copy of 72 hour notice with inspection. Follow up ins6ection is scheduled for Friday July 16 to observe cooling drawers and paper towel dispensers. A pattern of non-compliance is developing for Priority violation # 20, 3-501.16(A)(2) and (B) Cold Holding, which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
