Inspection Comments

OC Inspection - with minor remodel. Walked with Tim. Establishment about 90% complete. Correct the following items: 1) Provide a prep sink. Prep sink must be NSF, have hot and cold water through a mixing faucet, and drain to sewer through a floor sink or hub drain with a minimum 1” air gap. If sink in front service area is designated as a prep sink, another sink designated as a hand sink will be required in front service area. 2) Install an RPZ backflow preventer (ASSE 1013) on water line to combi machine. 3) Re-plumb drain line from 3-compartment sink so it drains to floor sink with a minimum 1” air gap. 4) Plumb drain line from espresso machine to either a hub drain or floor sink. Use hard pipe such as PVC. Espresso cannot drain to a bucket. 5) Install a tempered glass sneeze guard along front service counter, as discussed on site. Sneeze guard must come to 60” above finished floor, and have a return at cash register end. 6) Install FRP or tile at mop sink, both walls, to height of metal rail. 7) For Final approval, ensure all refrigeration is turned on and holding at 41*F or less. e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
