Person in charge stated the broth was cooked yesterday and was placed in an active state of cooling over 12 hours prior to inspection. Cooling process should be completed in a total of 6 hours. Foods should reach an internal temperature of 70*F or below within 2 hours of reaching 135*F. Within 4 hours of reaching 70*F temperature should reach 41*F or below. Broth discarded. Person in charge mentioned foods were placed on cart within 1 hour prior to inspection. All cold temperature controlled foods should be held at 41*F or below. An Active Managerial Control Training visit was offered to the person in charge. Training scheduled for 5/25/2023. Failure to correct repeat violations may result in legal action. Audit of food handlers conducted and 1 of 5 employee certification were available. Manager to reach out and provide by next routine inspection. No county legal action will result from this inspection. This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 0 Core Violations on this inspection.
