Establishment will be using time as a control to monitor items placed on carts near cooking station and a policy will be posted. Foods are to be documented with time it is removed from time control and/or when it will be discarded. Foods on carts will be discarded every 4 hours. Owner to reach out with updates to written policy. A Training Inspection was conducted with the person in charge and/or key personnel. Discussed establishment procedures regarding: cold holding, cooling, time as a control, plumbing maintenance, thermometer usage, storage of utensils, storage of personal items Audit of food handlers conducted and 6 of 6 employee certification were available. Manager to reach out and provide by next routine inspection. No County legal action will result from this inspection.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
