Observed prepared onions and carrots stored beneath marinated meats in walk in cooler. Items are to be stored in the walk in cooler to prevent cross contamination. Remember to store ready to eat foods and then swim, walk, fly type foods from top to bottom. Onions and carrots were moved and stored above ready to eat foods.

Observed marinated beef in small prep table across from rice cooker at 50*F. As per staff items had been removed from refrigerator a number of times during lunch. Meat was returned to walk in freezer to rapidly cool. Cold foods must be stored at 41*F or lower. Second temperature was taken and meat had cooled to 42*F during site visit.
