Observed cheese sauce 125*F, refried beans 130*F and rice 127*F at small three bay steam table across from gill. Hot hold of food to be 135*F or greater. Owner of establishment had cook reheat items on grill. Items were rechecked after heating at grill and reached 165*F. Advised owner to check water levels in steam table and have staff verify temperatures with metal stem thermometers to ensure temperatures remain at 135*F or greater.

Observed rice prepared on 4/7 in walk in cooler at 44*F. Cold hold of food must be at 41*F or lower. Owner stated that rice was prepared on 4/7 and placed in walk in cooler with lid on. Container of rice was embargoed and destroyed. Advised owner to fill containers no deeper that 2-4 inches, leave uncovered or loosely covered when cooling, and to stir product often to reduce temperature to 41*F

Emailed copy of 72 hour notice with inspection. Provided legal document to owner by email. Provided Reportable Disease hand out to replace old copy at establishment.
