Drinks must be in cups with lids and straws to prevent close contact of hands to mouth. Owner removed cups and bottles. Advised owner to set up a "break area" for staff to keep drinks near a hand sink for easy hand wash access.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed containers of fish and shrimp in sandwich prep cooler at 50*F and 51*F. As per manager items were in unit throughout the lunch rush. Ambient temperature of unit was found to be at 44*F after lunch and continued to cool to 41*F after meals were prepared and refrigerator doors were able to be shut. Owner discarded both the fish and shrimp. Temperature control for safety foods are to be held at 41*F. Owner also added ice baths to multiple products to assist with keeping food items at 41*F. Items were checked in the refrigerator with an ice bath and were holding at 41*F.

This establishment is not participating in the award program at this time and had 1 Priority, 0 Priority Foundation and 1 Core Violations on this inspection. No County legal action will result from this inspection. A pattern of non-compliance for foodborne illness risk factor violation # 20, 3-501.16(A)(2) and (B), Time/Temperature Control for Safety Food, Cold Holding, has been noted during this inspection. An Active Managerial Control Intervention Plan visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Site visit for an Active Managerial Control Intervention plan visit is planned for 10:00am on Friday, July 16th, 2021. Verbally discussed Notice of Inspection Rights with Jose M. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection.
