PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed cooked sausage, tuna salad, and hard boiled eggs in top section of prep refrigerator in kitchen measuring 49 - 50 degrees F. Person in charge (PIC) stated the food items had been in the refrigerator greater than 4 hours. All other food items were below 41 degrees F. Advised PIC that the food items are time/temperature control for safety (TCS) foods, which must be held below 41 degrees F. Ambient temperature of top section of refrigerator was 37 degrees F, however the oven exhaust next to refrigerator blows into top section of refrigerator. Recommend moving refrigerator away from the oven and keeping top section of refrigerator closed as much as possible. PIC discarded the food items and stated they will ensure TCS foods are held at proper temperatures
