Prep refrigerator near cash register measured with an ambient temperature of 56 degrees F. Red and green sauce stored in the refrigerator measured with internal temperature of 51-52 degrees F. All sauce was recommended for discard- see embargo list. TCS food items must be held at 41 degrees F or below. Adequate refrigeration is available to conduct business safely. Prep refrigerator will not be used to store TCS food items in it until it is in good working condition and can maintain food at 41 degrees or below. Discussed cold holding and conducting routine temperature checks of food and equipment.
