Bucket of pinto beans stored in the walk in refrigerator measured with an internal temperature of 57 degrees F. Beans were prepared approximately 24 hours ago. The bucket had a lid on it, which prevented proper cooling. TCS food items must reach 41 degrees F within 6 hours. The beans were suggested for discard. Discussed cooling perimeters.
