Observed ready to eat vegetable ranchero sauce with a date mark of 10/12/22. Today's date is 10/24/22, which exceeds the 7 day date mark policy. Item was discarded. Discussed date marking policy/procedures. Also observed ready to eat Ceviche with a date mark of 10/14/22, which exceeds the 7 day date mark policy. Per PIC, Ceviche was made yesterday but the date marker sticker was not updated. New sticker placed on Ceviche pan to indicate made on 10/23/22.
