Inspection Comments

First inspection for the coffee brewed differently on Cotton Lane. Walk through conducted with lock box access. The following items should be addressed before the next inspection. Please also see attached stipulation letter for comments. 1). Floors throughout will need to be finished out smooth and cleanable, areas around floor sinks need to be smoothed out, floor will need to be water sealed and control joints filled throughout except for the hall way and the customer area. 2). CMU walls will need to be blocked filled and painted in back room and drive through to 10 feet of height. 3). Back door will need a door sweep closing the gap under the door and weather stripping. 4). Re-mount the coved base were loose at the three compartment sink and install in the restrooms. 5). A hand wash sink will be required in the back room with three compartment sink. 6). A washable ceiling will be required for the back room with three compartment sink. 7). A 50 gallon water heater will be required, if placed on top of the restrooms then plumb in drain pan and pressure relief. 8). Install a drying rack over the three compartment sink to air dry washed dishes. Three compartment sink only has one drain board. 9). Close off the gap to the side of the mop sink. 10). Electric panel will need to be caulked in after wall is finished out. All penetrations through the wall, like at the drive through will need to be filled in and finished out smooth. 11). A or multiple dual check valves that meet plumbing standard ASSE1022 will be required for the water connected beverage machines. 12). See stipulation letter for additional comments. There is no separate water feed at the mop sink for chemical dispensers. A condition will be placed on the permit not to install them or provide an additional cold water line with angle stop at the mop sink. If desired and approved with the city the front service area can be approved without a ceiling as long as the rafters and air ducts are cleaned frequently enough to avoid dust buildup. Construction is at 70% . No County legal action will result from this inspection. E-mailed to Superintendent including inspection rights.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
