Inspection Comments

Pre-final walk through with the superintendent for the food service area. Subway and Mama De Luca'sThe following items were discussed: 1). Floor sink at the front service area should be sealed to the counter. 2). Backflow valve will be installed upstream of the soda system. Please do not install any copper downstream and provide hub drain. 3). The floor sink under the soda counter will be made accessible. 4). Make sure that the soda line does not run horizontally. If the distance is too long create a rigid hun drain and lead to the floor sink. End flex hose from soda in the hub drain. It might be wise to create one bigger hub drain that also ca capture water from ice machine. All drain lines should b rigid for the horizontal runs. 5). Dish washer drain will be led to the floor sink through a ridged line and led to the floor sink off the floor. Clamp flex hose to the rigid line,. 6). Walk in penetrations will be filled in and finished out flush and cleanable in the walk-in. 7). Please flash the side of the walk-in unit. 8). Penetrations through the wall at the CO2 line and AC condensate will be finished out. 9). Please silicone the the one eliason door mounting plate at the floor junctures. 10). Discussed- all escutcheon plates will be installed at the water and waste water lines and mounted with screw or silicone. Clean out covers will be installed where missing. 11). Big ice machines will be plumbed in. Please provide rigid drains and install so to allow for convenient floor cleaning. 12). Mop sink will be caulked in at the trims and where open. 13). Washable ceiling tile will be installed over the soda station. 14). See if you can turn the drain grate under the hot case so it is easily accessible for cleaning. 15). After cleaning all the sinks will be caulked in at the top wall junctures. 16). Back door will get a threshold and micro switch will be installed for the fly fan, adjust the louver 3-5 % outward. All testable backflow valves will need to be tested and certified. Please remove all equipment and tools and once ceiling panels are in and walk-in units holding temperature ok to stock and train. No County legal action will result from this inspection. E-mailed to superintendent - inspection rights provided.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
