Inspection Comments

Second pre-final walk through. Walk through with the superintendent. The following items will need to be addressed before the final inspection: 1). Repair leak on the water feed to the ice machine. Second west unit in ice room. 2). There are three water lines coming out of the wall to the west of these ice machines. Please install equipment if missing. 3). Provide escutcheon plates for these water lines. 4). There is some water on the floor at the west wall in the water heater room. Please investigate, seems to be one of the 4 copper water lines. 5). Please provide the dual check valves for all connections to the non-carbonated beverage machines. Discussed with plumber to install ASSE 1022 compliant dual check valves. 6). Provide the sneeze guards for the hot dog rollers and make sure they have side panels. 7). Please provide coved base in the following areas: a). Soda station Mama De Luca's b). Inside along the toe kicks in the sub way and Mama De Luca's. c). Along the entrance of the sub way. d). At the hand sink in the sub way. 8). Please find a solution for the strainers in the floor sinks. The ones in use clog to quickly and become a obstruction. May be metal dome covers are a better option. 9). Provide drain grates for all floor sinks. 10). Mount the drain line on the dish washer against the wall. The water comes out with high pressure so make sure that the water is directed properly or enlarge diameter of the pipe. 11). Drain line of sub way sink needs to be raised, provide a 1 inch air gap. 12). Please adjust the door sweep at the back door and close the gap under the door. 13). The fly fans at the vestibule doors are not working. Please make operational. 14). The light in the soda room is not working. Please repair. 15) Please finish out the door frame on the outside of the back door of the kitchen. 16) Please caulk the top wall junctures of the hand sinks in Mama De Luca's and subway. 17). Please silicone the door frames for the refrigeration room door frame. 18). Please finish out the abandoned electrical lines in the subway back room. 19). Please silicone the soda station to the counter along the sides at the mama De Luca's. 20). Re-run the condensate drain line on the subway cooler and transition into a rigid line. You might want to create some type of stand pipe and lead to the floor sink. Brace to the wall and follow gravity flow and keep a 1 inch air gap. Noted that beer cooler door is on order. and will be in shortly and installed. Wall repairs will be made in laundry room, restroom and side room to laundry room. Water feed to the steamer oven is 1/4 inch and is filtered. Outside structure / side walk juncture will be covered with a trim. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
