For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Cotija cheese, cream, cooked corn, butter, and mayo measured internal temperatures between 50°F-70°F in the right prep table and back reach-in refrigerator. Thermometer was calibrated on site. Per person in charge (PIC), these items have been delivered and placed in the units about an hour and a half ago and were moved into another refrigerator to facilitate rapid cooling. Ambient air temperature of the reach-in refrigerator was 51°F and the prep table measured 65°F per min/max thermometer. Establishment has adequate refrigeration to maintain operations. PIC notified to owner to have a repair technician service the units. Reviewed cold holding and equipment requirements with the PIC.
