Observed manual vegetable dicer stored away as clean with food debris between dicing block and handle. Advised person in charge (PIC) that dishware and utensils, which are used to process time/temperature control for safety (TCS) foods, must cleaned to sight and touch to prevent contamination of foods. PIC moved the vegetable dicer to the dishwashing area to be washed, rinsed, and sanitized.

Advised person in charge (PIC) that cutting surfaces shall be maintained so they are smooth and easily cleanable. PIC stated they will have the cutting boards re-surfaced or replaced.

Additionally observed dried food debris on touch screens of computers, microwave door handles, and handles of refrigerators on the kitchen main cook line. Advised person in charge (PIC) that areas shall be cleaned to sight and touch and at a frequency to prevent debris build-up. PIC stated they will clean more frequently and thoroughly.
