Observed TCS food items being delivered from off site catering kitchen. Items such as sandwiches, eggs, and salads measured with internal temperatures ranging between 60-75 degrees F. Receiving temperatures were not taken by staff. There is not a tracking system in place. Per PIC, food was prepared at catering kitchen within the last 2 hours. Discussed implementing a tracking system for times and food temperatures upon receiving with PIC. Food was placed in prep refrigerator to immediately be cooled to 41 degrees F or below.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
