At cooler drawers under cookline, observed tortillas being stored in bottom drawer directly under raw beef patties. PIC moved tortillas to separate cooler away from possible risk of contamination at time of inspection. When storing raw food items, ensure that they are stored according to their cooking temperature, with raw products always store below ready-to-eat foods. Proper food storage of raw products prevents cross contamination that can lead to foodborne illness.

Observed dishes at bar being washed, rinsed, and sanitized in sanitizer concentration that measured to 0ppm per chlorine test strip. Bar dishwasher was ran 3 separate times with the primer switch held down each time. After being ran 3 times, dishwasher sanitizer concentration measured to 100ppm per chlorine test strip. Discussed running the unit and measuring sanitizer levels throughout the day to ensure unit is working properly before running dishes through. Dishes were re-washed, rinsed, and sanitized at time of inspection

This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 0 Core Violations on this inspection. A pattern of non-compliance is developing for Priority violation #14, 4-501.114, which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Notice of Inspection Rights signed by Mark G.
