Observed raw beef stored above tortillas in prep cooler by stove tops. Discussed with PIC that all ready to eat foods must be stored above raw meat products. Beef was arranged to prevent possible contamination.

Observed facility using chlorine dishwasher with no chlorine test strips to check sanitizer. Discussed with PIC that functional test strips are required to check dishwasher sanitizer. Re-inspection by 10/19.
