PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Upon inspecting dispensing unit located at the 3-comp sink, dispenser unable to dispense quat sanitizing solution of 150-400pm. Quat dispenser must be able to dispense sanitizing solution within the range of 150-400ppm. PIC agreed to put in a work order and to handdose chlorine sanitizing solution using unscented bleach (available on-site in inventory at time of inspection) for sanitizing purposes within the establishment until the dispensing unit has been fixed. The establishment is also equipped with two dishwashing machines capable of sanitizing equipment and utensils within range of 50-100ppm. PIC discarded the solution in question at time of inspection.
