Manager stated the hot dogs had been opened one to two days ago and the date mark was an old one that had not been removed during dishwashing. Manager determined the correct discard dates and marked the containers. Reviewed proper date marking with the manager. Manager stated the door had broken two days before and the replacement is on order. The replacement door arrived during the time of inspection. Please install the new door. All food equipment must be non-absorbent, smooth and easily cleanable.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
