PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding........Package of raw tuna stored upright in a pan above the rim in the top of the cold table, and bowl of cooked crab stored on top of the pans in the top of the cold table both at 53*F internally. Manager stated items had been stored as such less than 2 hours and moved them to reach-in to re-cool. Please load the cold table properly to ensure TCS food is maintained below 42*F. Priority Foundation-5-103.11, Pf: Capacity-Quantity and Availability......Hot water faucet turned off at back hand washing sink, with only 75*F water available at that and the front hand washing sink. Hot water is available at other sinks. Please repair water heater and/or faucet to provide sufficient hot and cold water prior to reinspection 4/6/22.
