The lettuce shredded stored as clean underneath the prep table had lettuce residue along the food contact. Also, the press-down tomato slicer had white organic material in the non-food contact areas when it was disabled. Informed the the person in charge (PIC) that to obtain a small brush to ensure small spaces between that are in contact with food areas are properly cleaned. The PIC placed the equipment in the 3-compartment sink to be washed, rinsed, and sanitized. Please ensure equipment and utensils are cleaned to sight and touch.

Fiver ontainers of shredded lettuce covered in saran wrap were found in the walk-in cooler with an internal temperature of 44*F-51*F. The lettuce was prepared more than 5 hours prior, per time stamp on containers. The person in charge (PIC) verified the food temperatures using the establishment's thermometer. The food items failed to cool to 41*F within 4 hours. The food items were embargoed and voluntarily discarded by the PIC at the time of inspection. Suggested PIC to cool foods on top shelves in walk-in refrigerator and leave container uncovered or loosely covered. Reduce food amount to 4 inches or less in thickness and use metal pans if possible. Also, recommended PIC to not store lettuce by the cooler entrance.
