At start of inspection, walk-in refrigerator was holding with ambient air temperature of 48 degrees Fahrenheit with time-and-temperature control for safety (TCS) foods measured at 47- 49F. Please ensure all refrigeration can hold cold at 41F or colder. Per manager, establishment received large delivery 30 minutes prior to arrival at establishment and 70 percent of TCS items in walk-in refrigerator were received as part of that delivery. By end of inspection, ambient air temperature of walk-in refrigerator was 43F and dropping and TCS foods were measured at 45-46F and dropping. Manager called in work order during inspection. 24-Hour Re-Inspection - re-inspection will occur on 9/15/2023.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
