Observed employee washing dishes in mechanical dishwasher with a chlorine concentration of 0ppm. Primed machine and observed at 100ppm. Chlorine concentration must be between 50-100ppm for proper sanitation. Test strips should be utilized at the start of every shift to ensure proper sanitizer levels are being reached prior to washing dishes.

Observed raw nigiri and raw sushi items on menu with no consumer advisory on menu. Consumers must be alerted to menu items that are raw/undercooked with verbiage or a symbol and a matching symbol next to reminder advisory on the menu that includes, "Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness," PIC stated establishment will print advisory and add to menu. A reinspection will be conducted on Friday, 7/15, to check for addition of consumer advisory.
