Discussed with person in charge (PIC) that paper towels must be always available at handwashing sink. PIC restocked single-use paper towels. Per employee, pickled onions are made hot and then cooled down. The pickled onions were embargoed at the time of inspection. Discussed date marking procedures with the PIC. All RTE/TCS foods must be date marked after 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Discussed the importance of discarding all RTE/TCS foods after 7 days.

PRIORITY VIOLATION-5-202.11 (A), P: Approved System - Observed water hook up near the mop sink with a y-valve with shut offs below the backflow preventer. Observed two hoses from the y-valve with stops on both ends: left side was hooked up to a sprayer nozzle and left on. Observed right side connected to chemical dispenser. Shut off valves may not be connected downstream from an AVB as contamination could occur. Chemical dispenser must have its own dedicated water line and an internal air gap back flow device installed.

This establishment received a C Grade and had 2 Priority, 1 Priority Foundation violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager Observed no Certified Food Manager (CFM) onsite at time of inspection. Person in charge was unable to produce a certified food protection manager certificate. A CFM is required to be on the premises during all hours of operations. Provide a CFM onsite by next routine inspection. Repeat violation (2nd consecutive). Of Note: - On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal. Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
