Inspection Comments

Construction Inspection. Walked with Heather. Fellow Senior PR Inspector TB present. Correct the following items: 1) Mop sink is shared – provide access to mop sink for verification. Mop sink must have hot and cold water, drain to sewer, have adequate backflow protection, and a dedicated water line for any chemical dispensers (if present). 2) Ensure drain line for future kegerator is hard piped, sloped to drain, with a minimum 1” air gap at floor sink. 3) Provide vinyl-faced ceiling tiles above bar area; also recommended in production area. 4) Provide a split toilet seat for employee restroom. 5) Make employee restroom door self-closing. 6) Provide a cove base in restroom and bar; tooling in a cove is acceptable. 7) If prep table is relocated as discussed, provide adequate sneeze protection. 8) Smooth out flooring under 3-compartment sink in bar. Ensure it is also sealed to be non-absorbent. 9) Paint interior of bar where wood/plywood is exposed; recommend re-painting entirety of bar interior a light color. 10) Install a splash guard between 3-comp sink and hand sink in bar. 11) Provide weather stripping around/in-between exterior doors. 12) Complete other effective means of barrier protection requirements, including installing fly bait stations, fly lights, rodent bait stations. Will email paperwork with report. No County legal action will result from this inspection. Report emailed and inspection rights provided to Heather.

e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
