Inspection Comments

OC Re-inspection. Walked with Brad. Correct the following items prior to your routine inspection: 1) Install an RPZ (ASSE 1013) backflow preventer on water line(s) to combi/Rational oven. Ensure RPZ is installed at least 12” off the floor and in an area accessible for testing. Plumb drain line for vent from RPZ to floor sink. PIC states that he is having a hard time getting any certified backflow person out to do work at this time. 2) Have RPZs for combi oven and for soda system tested. Maintain certificates on site for inspection. Backflow must be tested yearly. 3) Re-plumb water and drain lines from combi oven and any other equipment at cookline, so that water and drain lines are off the floor and that drain lines have a minimum 1” air gap at floor sink. Ensure water lines are above drain lines. PIC states he does not want to re-plumb lines until the backflow is installed, to avoid repeat work. Dog Patio permit not approved at this time - appropriate signage required. No County legal action will result from this inspection. Report emailed and inspection rights provided to Brad.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
