Raw animal foods shall be separated during storage, preparation, holding, and display from raw RTE foods and cooked RTE foods. Discussed with Person in Charge (PIC) importance of proper food storage to prevent cross contamination. PIC moved raw chicken skewers for proper storage. PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. >>> In hot holding cabinet, next to pizza oven, observed cooked chicken and cooked ribs with internal temperatures 123-125*F. Temperatures verified with establishment probe thermometer. Except during preparation, cooking, cooling, or when time is used as a control all TCS (time/temperature controlled for safety) food to be maintained at 135°F or higher. Per employee, chicken and ribs were held in cabinet less than 2 hours. Employee reheated chicken and ribs to 165*F before returning to hot holding. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. Provide temperature dots, temperature strips or a waterproof, min/max irreversible thermometer to monitor the high temperature rinse at mechanical dishwashers. Re-Inspection within 10 days. An Active Managerial Control Intervention Plan visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
