OC Re-inspection. Walked with Kevin. All previously noted items have been addressed. This kitchen does not have a prep sink, and therefore is not permitted to wash and cut produce in this kitchen. All produce must be washed and cut in the main kitchen. Whole jalepenos which are deep friend whole and require no cutting are acceptable, as long as they are washed in the main kitchen and transported in a covered container. Observed prepped food storage in cart barn. All items must be pre-packaged in tight fitting containers - no open foods. No County legal action will result from this inspection. Report emailed and inspection rights provided to Tim.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
