Inspection Comments

OC inspection conducted with superintendent by appointment. Inspection rights were delivered via email. The establishment was closed and not operating. The permit is not approved. Please address the following items prior to the OC re-inspection: 1) Trim or lift the drain for the prep sink to provide a 1" minimum air gap. 2) Provide a test report for the RP backflow installed upstream of the soda carbonator units. 3) Trim the foam sealant flush at the chasses and in the walk-in cooler penetrations. Caulk the foam with silicone or paint with semi-gloss paint. 4) Paint the wood substrate at the bar with semi-gloss paint. 5) Caulk the bar countertop/wall gaps with silicone. 6) Caulk-in escutcheon plates throughout the kitchen and bar with silicone. 7) Provide rubber cove base to the millwork/floor junctures at the bar interior. 8) Provide the missing lights for the ventilation hood system. 9) Reseal the ventilation hood gaps with an aluminum based silicone. 10) Reseal the sink fixtures in the kitchen to the walls with silicone and caulk-in the new fixed equipment and sink fixtures at the bar with silicone. 11) Caulk-in fixed shelving throughout the kitchen with silicone. 12) Verify the air curtains at the bar garage windows are operational and activated solely by microswitches. At the OC re-inspection, ensure hot water measuring 120' F minimum to the plumbing system and all refrigerators are on and measuring at 41' F or below. Please contact the Department to schedule a follow-up inspection at 602.506.6824 once violations have been corrected. Please be advised that the New Business Permit Application fee includes one initial inspection and one follow-up inspection. Additional fees will be assessed for any additional follow-up plan review inspections. MCESD inspection report was delivered via email. No County legal action will result from this inspection.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
