OC Re-Inspection - E&D Class 4 - Main Kitchen This inspection was conducted with the facility manager. A pdf copy of this inspection report was emailed to Dan L. at the time of this inspection. No county legal action will result form this inspection. This facility is not currently in operation. The following items must be addressed prior to final permit approval; 1. Provide waterproof material such as FRP on the walls behind, around and underneath the mechanical dishwasher and the three compartment food prep sink. Use FRP adhesive. Do not use nails or screws. 2. Provide a certified, RPZ backflow prevention device for water supply lines to combi-ovens and/or steamers. 3. Ensure that there is adequate backflow protection installed on the submerged water inlet in the scupper drain in the dishwasher area 4. All exhaust hoods must be fully functional and all cooking equipment must be at least 6 in. behind the edges of the hoods. Provide metal cove base at the floor/wall junctures beneath the exhaust hood. 5. The outside mop sink currently drains into an unfinished cement trough drain. The bare cement in the trough drain must be smooth, non-absorbent and easily cleanable. 6. A dedicated water line must be installed for the chemical dispenser in the mop sink area or they must be removed. Y-connectors are not permitted and all chemical dispensers must have air-gaps. 7. Hose bib vacuum breakers are required for all hose bibs and faucets in the mop sink area. 8. A certified, drinking water safe RPZ backflow prevention device will be required for all water lines that feed soda carbonators, including the one in the bar. 9. Dedicated hand sinks with hot and cold water are required in the bar and in the ice machine room adjacent to the bar or the door to this room must be removed. 10. A self-contained, portable hand sink with hot and cold water and with fresh and wastewater tanks is required for outdoor cooking operations. Also, separate plan submittal and approval are required from MCESD for outdoor cooking operations. 11. Adequate hot water is not available in the outside women's restroom and must be restored. 12. Waterproof material such as FRP must be installed behind the mop sink in the ice machine room of the bar. Also, all severely damaged drywall in this room must be repaired. 13. Provide a hard pipe drain line to the floor sink with a minimum 1 in. air-gap for the beer tap in the bar. There is currently a flexible hose installed. 14. Provide waterproof material such as FRP on the short wall behind the sinks and ware washing machine in the bar. Also, provide a cove base finish as all floor/wall junctures in the bar and the adjacent room.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
